What to know | Rubi Family in Jianshi: A Weekly Bread Day Within Mountain Life

"Rubi Family" in Jianshi, Hsinchu is run by two sisters, Savi and Yawu, and their families. It combines a B&B with a restaurant, and bread is part of the daily routine. In public interviews, the two talked about how they usually make it once a week to prepare for weekend guests. There is no fixed menu, and it is not a bakery that bakes large quantities of bread every day.

What your family wants to eat becomes the starting point for the next production

The two sisters returned to the mountains around 2011 and gradually took over the B&B and restaurant run by their father. Children's preferences and ingredients brought by relatives and friends may become inspiration for baking; the publicly shared items include bread with millet, chocolate beans, pumpkin filling, etc., but this does not mean that they will be served at the same time every time you visit.

This small-volume production method is different from the store type that maintains complete items every day. The menu is closer to the family's living arrangements for the week, which means that if readers go for a specific bread, they should first confirm whether it is produced and the quantity available for purchase, instead of just expecting it at the replenishment pace of a general bakery.

When baking on the mountain, you can’t just look at the recipe when it comes to time

Savi mentioned in the interview that changes in temperature and humidity in mountainous areas will affect the dough, so it is necessary to observe the actual state and adjust the fermentation and production rhythm. Food preparation, restaurant service and B&B work are also carried out in a staggered manner, and the sisters fill each other's positions according to current needs.

From this way of working, bread is not a commodity independent of place. It is connected with water, electricity, material supplies, climate and family manpower; operating in mountainous areas requires additional arrangements for many conditions that are easy to obtain in cities. These backgrounds can better explain why production and items are limited than just using a "handmade" label.

Pre-fermented dough and ingredients are the operator’s own flavor choices

Savi prefers to use pre-fermented dough and hopes to maintain a clear taste of the flour and the ingredients added. This is the producer's explanation of her own method. The actual taste will still vary depending on the item and production state. The public description cannot be regarded as a guarantee that every batch of bread will be exactly the same.

If you want to understand this type of local baking, you can first look at where the ingredients come from, when they are made and how they are served, and then talk about whether they fit into a certain European, Japanese or Taiwanese classification. The conditions provided by the family and place often affect the final bread more directly than the name of the existing style.

When going to Jianshi, first ask which service is restaurant, accommodation or bread?

The address is No. 6, Neighborhood 1, Yufeng Village, Jianshi Township, Hsinchu County. B&Bs, restaurants and bread are different services. Reservation of accommodation does not mean that the same bakery items are available at any time. If home delivery is open, it must be confirmed according to the announcement, and it cannot be assumed that long-term fixed orders are received.

You can view it firstThe official community of Rubi Family, confirm the business, reservation and supply arrangements for that week, and then plan the itinerary according to the mountain roads and weather. What is worth getting to know here is not just a certain type of bread, but how a family puts hospitality, baking and life in the mountains at the same pace; leaving time to understand the place is usually closer to its business methods than just chasing a popular product.
