More/Less Project K: Burgundy Wines, GEAY Oysters and Terroir
More/Less pairs Domaine de Mauperthuis wines with GEAY oysters. Distinguish Crémant, Saint-Bris Sauvignon Blanc and Chablis, and check current availability before booking.
Taipei Wine Café More/Less and 東遠國際 present Project K: Flavor Archaeology, pairing three Domaine de Mauperthuis wines with GEAY oysters. The project brings northern Burgundy’s geological history to the table, while flavor also depends on grape variety, winemaking and the ingredients served. Limestone and fossils describe the region’s background; they do not establish that a flavor in the glass comes directly from ancient oyster shells.
Key Facts
The three wines are Crémant de Bourgogne Brut, Saint-Bris Sauvignon Blanc and Chablis AOC.
Saint-Bris Sauvignon Blanc and Chablis, which are mainly Chardonnay, are not the same wine.
GEAY Fine de Claire N°2 and friandise are available on site, and there is no guarantee that both will be available at the same time.
An All-Day Wine Café
More/Less was jointly established by A Glass or Two and MORE to connect afternoon and night in the form of an all-day Wine Café. Project K chose to start from the stratum, so that the wine list not only lists the names of the production areas, but also provides an entrance to understanding the environment of northern Burgundy.
The marine life fossils in the Kimmeridgian formation are a frequently discussed part of the Chablis landscape; however, how the grapes mature and how the winery ferments and matures also affects the finished wine. It's clearer to read the geographical context separately from the actual wine than to think of "minerality" as a direct transfer of a single soil substance.

Three Wines, Different Grapes and Methods
Domaine de Mauperthuis was founded by Marie-Noëlle and Laurent Ternynck. This time, Crémant de Bourgogne Brut uses Chardonnay for secondary fermentation in traditional bottles. The introduction lists 15 months of maturation; the structure of the bubbles gives it a different table role from still white wine.
Saint-Bris Sauvignon Blanc presents another clue as Sauvignon Blanc. It should not be regarded as Chablis just because they both belong to Burgundy. Chablis AOC returns to the production area vocabulary of Chardonnay. When comparing, you can first ask about the grapes, vintage and serving condition, and then understand the fruit aroma, acidity or minerality descriptions used by the store; these are flavor introductions, not the results that everyone will necessarily feel.

GEAY Oysters and Daily Availability
GEAY comes from the Marennes-Oléron area on the west coast of France. After Fine de Claire N°2 is cultured in the sea, it will be intensively cultured in Claire saltwater pools; friandise is another small oyster choice. The names and breeding arrangements of the two are different, so it is not appropriate to judge the quality of flavor only by size.
This project introduces two kinds of oysters, but the items are arranged according to the supply on site. It is not guaranteed that one can compare the two kinds at the same time. Fresh ingredients are affected by transportation, season, and conditions of the day. When making a reservation, you can inquire about the source, quantity of portions, whether the dishes can be adjusted, and personal dietary restrictions.

Check the Wine List and Booking Conditions
If you arrange this plan as a dinner party, you can start with the wine you want to know about, and then ask if there are by-the-glass, set or meal-matching options. The three wines do not necessarily mean that you must drink them all at once; the information value of the event also lies in understanding the differences in labels, varieties and production areas.
This article does not list the confirmed complete supply period, package price and reservation quota. Please check with More/Less for the latest arrangements. The wines and oysters in the photos are planned content records and cannot be directly used as a commitment to the day's inventory or fixed menu.
